Our Story
The Wylde Beet was founded in Hailey, Idaho in 2023 with the desire to bring healthy, sustainable, and tasty food to our community. We started this journey with the belief that eating more plant-based is one of the many ways to fight climate change, as well as prevent some of the most common diseases that chronically ail so many today. We want to make this lifestyle more approachable, accessible and affordable for all.
After finding “Betty” - our beloved food truck - we set out to meet our current (and future) plant-eaters where they are. After a successful year of sharing just how easy, delicious, and uplifting it is to be a part of the solution, we decided to go all in on a bigger space. The Wylde Beet Cafe is the place to go for a sustainable, local, & interesting menu in a warm and inviting space… now with organic coffee! We hope to see you soon.

Founder, Owner, & Snack Master
Growing up in the Wood River Valley Sloan acquired a deep love and respect for the wilderness and community around her. After earning her degrees in health education and community development, working on multiple farms, witnessing the power of sharing good food while working for the Hunger Coalition, and ultimately experiencing the health benefits of a plant-based lifestyle - Sloan knew she wanted to create something for her community that makes being proactive about our health, and the planet’s, easier.
You can find Sloan adventuring outside in many forms with her dog, friends, and family.

Chef, Barista, Burrito-boy
Born and raised in the Wood River Valley, Jackson is passionate about the intersections between food, human health and performance, and environmental sustainability. He’s an avid cyclist, skier, and trail runner fueled by a plant-based diet since 2014. With degrees in physiology, nutrition and advanced training in sports nutrition, Jackson counsels plant-based athletes from around the world to reach peak performance on plants. He’s also a TEDx speaker and host of the nutrition-focused podcast In The Flow. You can usually find Jackson riding his gravel bike, baking sourdough loaves, or drinking fancy coffee. Susie moved to the Wood River Valley in 1990 to pursue a life in the mountains and a life with her husband. She is an empty nester mom to three young adults, each of whom she is wildly proud of.
As an avid outdoors person, and self proclaimed adventurer, it’s important to her to stay active with many forms of daily exercise. You can usually find her working in her garden, exploring the local trails and lakes, or on top of a mountain. Her frequently used mantra is “enthusiasm fuels motivation.

Manager, Chef, & Creative Queen
Lex grew up here in the Wood River Valley and thinks so fondly of the community and the natural beauty that raised her here in Central Idaho. Although she have spent time living and exploring other places in the world, her heart and home are here in Hailey.
The best way to learn about Lex is to know some of the things that bring her joy. Lex enjoys long hikes and sleeping under the stars. Preparing and eating home-cooked meals with friends and family, and she is happiest when exploring new places that fill her with awe and curiosity.
Lex is a creative and spends her free time dreaming up new recipes, and making art with beads, paint, and in the garden. Lex feels lucky every day to live in a place where people care about each other, and strives to give back and improve this community as best she can.

Barista, Potter, and Explorer at Heart
Born and raised Washingtonian, Amelia has spent much of the past 10 years traveling and living abroad. While away, she discovered the importance the role food plays in community development and human relationships. With a passion for art and design, Amelia aspires to bring people together through intentional gatherings and spaces that support and nourish the people.
In her free time, you’ll find Amelia skiing in the mountains, raft guiding and kayaking the waters of the North West, and pursuing her passion for art, flinging mud around in the ceramic studio.
